rantes del suroeste de Francia, región conoci-
da por su excelente cocina, que lleva a las

L’Auberge Basque
Está en la campiña vasca, al pie de los Pirineos y a
poca distancia de St. Jean de Luz. Allí el chef Cédric
Béchade nos demuestra su talento con platillos refi-
nados y maravillosamente adornados.
El foie gras de pato se sirve con talou, crema de
maíz entomatada, ejotes al vinagre de Jerez. El arroz
bomba se hace con leche de almendra, mermelada y
frambuesa. El cordero de Castilla es asado y servido
con boulgour al estilo paella, tomates, apio y flor de
tomillo. El lechón de Ibaïona, el bacalao, el atún
toman sabores inéditos y magníficos gracias a la
batuta de Cédric.

rants in the south west of France, a region well-
known for its excellent cuisine that serves the
most refined dishes. Let’s take a tour of two of the
best restaurants in the region.
L’Auberge Basque
Set in the Basque countryside at the foot of the
Pyrenees and not far from St. Jean de Luz. Here,
chef Cédric Béchade shows off his talent with
refined and wonderfully adorned dishes.
The duck
foie gras
is served with talou, corn
and tomato cream and French beans in sherry
vinegar. The puffed rice is prepared with almond
milk, marmalade and raspberries. The Castilla
lamb is grilled and served with paella-style bulgur,
tomatoes, celery and thyme. The Ibaïona suckling
pig, the cod, the tuna take on unusual and wonder-
ful flavors thanks to Cedric’s guiding hand.
