The One&Only Palmilla Resort Agua restaurant, a exclusive outdoor creation of executive chef Larbi Dahrouch, serves an exquisite hybrid of Mediterranean and native Mexican cuisine, and it is a more casual offer to the resorts sig- nature restaurant, MARKET, by Jean Geroges.
Born in Morocco, Larbi Dahrouch was a disciple of the legendary French chef Jean-Louis Palladin, travelled across Mexico before the opening of the Resort to discover authentic Mexican cuisine, tast- ing from its multiple markets and food stands. As a result, the Agua menu consists of classic Mediterra- nean cuisine with a profound influence of Mexican cuisine and ingredients.
Agua is located on a spectacular side cliff with views towards the ocean, adjacent to the recently inaugurated Infinity pool. The restaurant was de- signed by Adam D. Tihany.
The menu of Agua is compromised by strong dishes such as the ‘wildMexican mushroom tart, with balsamic vinaigrette and tender lettuce salad’. Main courses included such dishes as the roasted parrot- fish accompanied with barbecued fennel and heirloom sauce garnished in saffron.
This menu is complemented by an extensive wine list that includes various of the better-known Mexican wines. Sommelier Ricardo Uribe has also included wines from France, California, South America, New Zealand and Australia.
The main hall inside Agua is able to accommo- date 142 diners, as well as additional 50 inside the bar and lounge area. It is open Monday through Sunday, and there exist different menus for break- fast, brunch, lunch and dinner, as well as two menus for children. Furthermore, and additional menu fea- turing hors d’oeuvres and lighter dishes is found inside the bar, lounge and pool area.
