At the gateway to Kluane National Park in Yukon, in the midst of the great outdoors, and at the foot of snowcapped mountains, there is the finest restaurant around Yukon. It is a blue wooden homestead which houses the restaurant and the charming hotel, and its delight is in charge of chef Victor Bongo, a native of Congo, Africa.

His cuisine combines the flavors of Mediterranean plants he harvested and herbs of the forest or grassland. The meat is refined, seafood coming from the Pacific Ocean near the mouth filled with the scent of the sea enhanced by the seasonings chef, while vegetables are chosen for their beauty and taste. Victor also combines the flavors of his native Africa, a bit of French influence and a touch of Mexican cuisine. It is a delicacy that is enjoyed in a homely and refined atmosphere.

Well worth trying the duck with orange sauce reduced, bison meat, ravioli with lobster tails or crab cake. The menu changes every week and according the product that can be found, you can enjoy a roast lamb, venison with mushroom season, from the delicious fish of the sea or lake trout and salmon.

 

 

Victor’s jovial spirit and good humor are reflected in the love he gives to each of his works of art. The kitchen is his kingdom and diners appreciate its delicate dishes prepared and the simplicity of their salads which mixes flavors. The perfect dessert to end the meal with a wonderful scenery, from the crème brulée to fruitcake.
