Este 2023 se hablará mucho del vino mexicano luego de la edición 43 del Congreso Mundial de la Viña y del Vino, en Baja California, con conferencias magistrales de enología. Los representantes de los 14 estados vitivinicultores mexicanos tuvieron la oportunidad de mostrar sus distintas botellas que viajaron hacia destinos en el extranjero. La producción de vinos en México –se habla de 400 bodegas– está concentrada en el centro y norte de México, y tal como se posicionan en Francia, trabajan –en su mayoría— con ediciones limitadas. Aun así, el Catálogo Nacional de Variedades Vegetales del Servicio Nacional de Inspección y Certificación de Semillas (SNICS) indica que son producidas 82 tipos de uvas. En el municipio de Moctezuma, en San Luis Potosí se ubica Cava Quintanilla, donde bajo un clima semidesértico crece la uva Nebbiolo (un clon italiano certificado) con la que se elabora el vino tinto reserva reposado por 12 meses en barrica de roble francés. El perfil aromático de este vino es debido en gran medida al suelo arcilloso con alto contenido mineral. Así mismo, en el municipio de Soledad, bajo un clima semidesértico potosino, la bodega Pozo de Luna ha cultivado las cepas tintas Cabernet Sauvignon, Merlot, Syrah y Malbec con las que ha producido varietales y un trivarietal que expresan personalidad y elegancia; ambas son un reflejo de la experiencia enológica de un mexicano, el Dr. Joaquín Madero Tamargo. ¿Deseas confirmar la calidad?
