es ahí donde entra la química en la cocina, porque
todo son reacciones químicas.
Se trata de derribar mitos y costumbres,
comenta, como aquel que dice que si salas la carne
10 minutos antes pues no lo puedes hacer porque
se va a desangrar. “Esos son mitos, o la guarnición
aromática, en muchas cosas tu ponías a rostizar
una pieza grande de carne con cebolla, que según
esto le iba a aportar sabor a la carne, y está com-
probadisimo que aunque la tengas una hora en el
horno no le va a aportar nada”.
Hablamos de una cocina más inteligente,
donde ya no usas la zanahoria para aventársela de
la nada, la cual ahora la puedes ocupar para que se
la coma el comensal.
Para Gilles el plato se piensa primero, igual en la
combinación como en los sabores; y en segundo en el
cómo lo vamos a presentar porque dicen que de la
vista nace el amor.
“Es como un arte abstracto (...) donde se trata
hasta de analizar lo que tiene en la cabeza el chef,
qué estaba pensando, qué sentimientos, qué
emoción quiso transmitir, incluso el humor que
tenía el chef a la hora de haber creado este plato,
donde todo influye”.
A finde cuentas se trata de la nueva cocina inteligen-
te, presente en uno de los restaurantes que marca la
pauta en la nueva cocina mexicana.

present in one of the restaurants which is a guide-
line in the New Mexican cuisine.
