in the sunny gorges. At an altitude of three hun-
dred meters, the climate may be associated with
the rigor of the mountain and the sweet humidity
of the ocean. In autumn, the beautiful Indian sum-
mer of SanMartín del Bearn and the southernwind
allow “
passerillage
” to occur —a overmaturing of
clusters that ensures the inimitable smoothness
of the Jurançon.
These local stocks are suited to the climate:
very high stocks that escape the frosts of spring
and very resistant grapes. The Gros Manseng is the
basic stock of the smooth young and dry Jurançon.
The small berry Petit Manseng produces the great
smooth aging wines.
In America, the Bodega Terrazas de los Andes
name fromArgentina set itself to the taskof bringing
over the Petit Manseng stock in 2000 and cultivat-
ing at a small farm by the name of “La Yaima” at an
altitude of one thousand meters above sea level.
There, in small carefully selected plots, the
soleadas cañadas. A trescientos metros de altitud,
el clima asocia el rigor de la montaña y la dulce
humedad proveniente del océano. En otoño, el
hermoso veranillo de San Martín del Bearn y el
viento del sur permiten el “
passerillage
”: una
sobremaduración de racimos, que confiere su ini-
mitable suavidad al Jurançon.
Estas cepas locales se adaptan al clima: cepas
muy altas para huir de las heladas de primavera y
uvas muy resistentes. El Gros Manseng es la cepa
de base del Jurançon seco y joven suave. El Petit
Manseng de pequeñas bayas produce los grandes
vinos suaves de crianza.
En América, la casa Bodega Terrazas de Los
Andes, de Argentina, se dio a la tarea de traer la
cepa Petit Manseng en el año 2000 y cultivarla en
la pequeña finca llamada “El Yaima” a mil metros
de altura sobre el nivel del mar. Allí en pequeñas
parcelas cuidadosamente seleccionadas, la tierra
generosa y el trabajo paciente de los viticultores
