equila is the Mexican drink par excellence and
is, of course, Mexico’s most famous ambassa-
dor. To demonstrate the influence of our coun-
try and its beverage, we only have to remember that,
at the close of 1994, Mexico suffered another of its
financial crisis, which not only affected our nation
but many others, as well. That influence was reflect-
ed in the fact that the “tequila effect” concept was
coined in the global economy.
Starting in the 1990s, tequila went from being a
drink consumed by the lower and lower-middle class-
es and became the drink of the elite, found in the best
bars and restaurants, as much in Mexico as abroad.
This is not something that happened by chance, but is
due to the care taken in the manufacturing process
and the quality of the final product.
Todaymany tequila companies try to obtain certi-
fication from the International Organization for
Standardization (ISO 9000) as an assurance of their
quality. They are thus able to develop new products
and have a competitive edge.
The tequila manufacturing process
• Jima
The leaves of the agave are cut away and the plant is
taken out of the soil in order to remove the “piña” or
heart (this takes place, ideally, when it is between 7
and 10 years old). The heart is then taken to the fac-
tory, where it is divided in two or four parts.

l tequila es la bebida mexicana por antonomasia,
y por supuesto es el más famoso de los embaja-
dores de México. Para probar esta influencia de
nuestra República, y de nuestra bebida, claro, baste re-
cordar que a finales de 1994 México sufre otra de sus
crisis económicas, que no sólo afectó a nuestro país si-
no también a muchos otros, y esta influencia se ve re-
flejada concretamente en que en la economía mundial
se acuñó el concepto “Efecto tequila”.
A partir de la década de los noventa el tequila pasó
de ser una bebida de consumo de la clase media-baja y
baja a ser una bebida de élite, encontrándose en los me-
jores bares y restaurantes, tanto de México como del
extranjero. Esto no es casual, sino que se debe al cuida-
do que se sigue en su proceso de elaboración y a la cali-
dad que muestra el producto final.
En la actualidad muchas compañías tequileras bus-
can entrar en el registro de normas internacionales (ISO
9000) para asegurar la calidad. Así, desarrollan nuevos
productos y cuentan con una diferencia competitiva.
Proceso de elaboración del tequila
• Jima
Proceso mediante el cual se cortan las hojas del aga-
ve y se extrae la planta del suelo para obtener la pi-
ña, cabeza o corazón (idealmente entre 7 y 10 años
de edad). Posteriormente se llevan a la fábrica don-
de se parten en dos o en cuatro partes.
