the use of organic products and spices. He reinvented
Indian food with unusual creations and trimmings,
a collection of local recipes brought to a higher level.
Varq retains theHinduway of cooking, but uses exot-
ic ingredients like sea bass, scallops, foie gras, turbot,
beach crab and Karachi shrimp.
Varq is a superb restaurant that manages to
prove that Indian food can be as complex, elegant
and creative as any dish is served in Paris. Every vis-
it to Varq is a culinary revelation. The Kerala roast
duck with coconut and cherries, and the wildmush-
roomKhumb Varki, are a testament to that.
The presentation of Chef Ogerori’s culinary cre-
ations is served in an environment surrounded by
the paintings of famed artist Anjolie Ela Menon.
His works have beenmeticulously restored and rest
comfortably in their new home. Additionally there
are other paintings, antiques and modern sculp-
tures that make Varq a distinctive hallmark.
The dessert table is a visual feast which attracts
the imagination to the point of distracting the at-
tention of diners throughout their meal. The Crème
Brulee with masala chai and ice cream with Baileys
stands out, as an excellent end to a perfect meal.

Everything in this restaurant is perfect. The
