¿Qué los motivó a realizar esta gira?
Joan:
Varias razones, primero el hecho de que pa-
samos por un momento fantástico; estos logros nos
impulsan a realizar cosas nuevas, de hecho siempre bus-
camos innovar, ya que la casa ha estado en contra del
conformismo. También se dio la posibilidad de que nos
financiaran esta idea loca de hacer una gira por diferen-
tes lugares del mundo y cerrar el restaurante durante
cinco semanas, aun cuando El Celler de Can Rocamantie-
ne una demanda de clientes constante. Evidentemente
detrás de esto hay ganas de aprender, así como de viajar
con el equipo completo para agradecerles su fidelidad de
llevar tantos años trabajando al máximo nivel. También
es una forma de buscar inspiración en otras culturas,
encontrarnos con otros horizontes y descubrir nuevas
formas de entender la cocina.
¿Qué es lo que más les gustó de México?
Jordi:
Todo, México es un país increíble, con una
cultura culinaria muy vasta; cada pequeña región
tiene una especialidad y no te da para conocerla por
completo. Nos encantó entrar al mundo de los chiles
y entenderlo, no como picante, sino como un matiz
aromático que puede dar mucha profundidad. Me en-
canta el chocolate, un producto muy mexicano y a
partir de éste los moles.
Joan:
Sentimos envidia de la cocina mexicana y su
gran diversidad; es muy difícil definirla, hay muchas
cocinas mexicanas, en cada ciudad, cada pueblo. Cada
rincón tiene su cocina, su encanto, su diversidad y su
complejidad, eso es lo más fascinante de este país.

¿A qué llamas sus matices?
Jordi:
La primera puntada de sabor, esa que es
siempre estimulante, picante. Unos son más secos,
otros más ácidos, ahumados o perfumados.
What motivates you carry out this tour?
Joan: Several reasons, first the fact that we
passed a great time; these achievements drive us
to make new things, in fact we are always looking
for innovation, since the house has been against
conformity. Also someone gave the possibility to
fund this crazy idea of doing a tour to different
parts of the world and close the restaurant for five
weeks, even though El Celler de Can Roca maintains
a constant demand of customers.
Evidently behind this, there is enthusiasm to learn
as well to travel with the whole team to thank them for
their loyalty to so many years working at the highest
level. It is also a way to find inspiration in other cul-
tures, meet new horizons and discover new ways to
understand the kitchen.
What did you like most about Mexico?
Jordi: Everything, Mexico is an amazing country
with a vast culinary culture; each small region has its
own specialty and does not give you enough time to
know it completely. We loved to enter the world of
the chiles and understand it, not as spicy, but as an
aromatic nuance that can give a great depth. I love
chocolate, a product very Mexican and departing
from this, the moles.
Joan: We feel envy of Mexican kitchen and its great
diversity; it is very difficult to define, there are numer-
ous Mexican cuisines, in every city, every town. Every
corner has its cuisine, its charm, its diversity and its
complexity, that is the most fascinating of this country.

Towhatdoyoucall itsnuances?
Jordi: The first impression of taste, that one that
is always stimulating and spicy. Some are drier, others
more acid, smoked or scented.
