EL ARTE DE HACER MEZCAL
En un lugar como México, en donde las tradiciones,
usos y costumbres se entrelazan con las culturas in-
dígenas, es en donde la vida cotidiana se convierte en
arte. Tanto en sus tapetes y su arquitectura, como en
su pintura y gastronomía, se palpa la destreza de la
que surge la belleza de transformar, por ejemplo, una
simple planta, en una bebida casi espiritual. El maes-
tro mezcalero, involucrado en su elaboración es un
artista, que conserva los rituales del chamán. Este
maestro, en su quehacer utiliza técnicas ancestrales
para crear una obra de arte a través de su conocimien-
to, su corazón, su alma y su espíritu.
ALEGORÍA CON EL VINO DE MESA
Si hablamos hablar de una bebida que se pueda com-
parar, en su variedad y riqueza ancestral, con el vino
de mesa, ésta es el Mezcal; además de los años que se
lleva elaborando, su historia mística y las diferentes
variedades de agave y regiones en donde se produce,
derivan de una riquísima cultura ancestral.
De igual forma es posible referirse a las distintas
variedades de agave, como a las diferentes variedades
de vid y cómo, cada una de ellas, tiene características
propias de la tierra, la altura y el agua; los árboles fru-
tales y arbustos que los rodean, así como el clima. Y
como muchos vinos, en el mezcal, también existen
mezclas que les dan características más interesantes
y caprichosas.

and bushes that surround them, as well as the
weather. And as many wines, in the Mezcal there
are also mixtures that give the drinks more inter-
esting and capricious characteristics.
