¿Están conscientes de la alquimia y la energía
con la que crean cada uno de sus platillos?
Joan:
Claro, la cocina es eso. La cocina es un
lenguaje, es una manera de contar cosas y para eso
se necesitan palabras o letras; en este caso son los
productos y tratamos de buscar la conexión y el
equilibrio que consiga construir las frases que aca-
ben contando algo.
¿Cuál fue el vino seleccionado para México?
Josep:
Hemos hecho un ensamblaje entre lo que
es nuestra tierra y tratamos de compaginarlo con
costumbres mexicanas, de manera que hemos traído
cuatro vinos, que nos seguirán acompañando en la
gira. Pero especialmente en México hemos incorpora-
do vinos de Baja California, cerveza artesanal, mezcal;
hemos cocinado con tequila reposado y finalizamos
incluso con un pulque.
Josep, ¿a qué le llamas dar un vuelco al éxi-
to y cómo se amplía el conocimiento cuando
esto sucede?
Josep:
La situación en este momento para noso-
tros es privilegiada, al romper fronteras, la rigidez
y ese salir de zonas que se han vuelto estables. Lo
que hemos estado buscado es interpretar de nuevo
nuestro proceso creativo y empezar de cero con otros
ingredientes en otras zonas, y esto siempre sirve de un
gran estímulo, es un estímulo creativo, que nos sirve
a nosotros y nuestro equipo. Cambiar el eje del co-
nocimiento da otra perspectiva. De hecho en México
hemos intentado abrirnos, no sólo desde un punto de
vista del conocimiento, sino también de palpar a flor
de piel lo que representa la cultura mexicana.
¿Cada cuánto se reinventan los Roca?
Joan:
Llevamos 27 años de crecimiento y seguire-
mos creciendo con esa misma obsesión de plantear
nuevos retos. De manera que tenemos todos los ejes
abiertos, con un planteamiento muy potente a nivel
interdisciplinar y seguiremos creciendo puertas aden-
tro, pero también con esa capacidad de mostrarnos
abiertos al mestizaje, de esto que simboliza la cultura
gastronómica del mundo.

re you aware of the alchemy and the energy
that you use to create each of your dishes?
Joan: Of course the kitchen is that. The kitchen is
a language, is a way of telling things, and to do that,
words or letters are needed; which in this case are the
products, andwe try to find the connection and the bal-
ance that will succeed in building the phrases that end
up counting something.
What was the selected wine for Mexico?
Josep: We have made an assembly between
what it is our land and try to combine it with Mexi-
can customs, so we have brought four wines that
will continue to accompany us in the tour. But es-
pecially in Mexico we have incorporated wines from
Baja California, handcrafted beer and mezcal; we
have cooked with tequila being rested or aged and
finish even with pulque.
Josep, what do you call a turn over to the suc-
cess, and how knowledge is expanded when
this happens?
Josep: The situation right now for us is very privi-
leged, breaking borders, stiffness and that getting out
of areas that had become stable. What we have been
looking for is to interpret our creative process again
and starting from scratch with other ingredients in
other areas, and this always serves as a great encour-
agement, is a creative stimulus, which serves our team
and us. Changing the central concept of knowledge
gives another perspective. In fact, in Mexico we have
tried to be open, not only from the point of view of
knowledge, but also to feel on edge what it represents
the Mexican culture.
Every how much the Roca brothers have been
reinvented?
Joan: We have 27 years of growth and will continue
growing with the same obsession of pose new chal-
lenges. So we are open to all possibilities, with a very
powerful approach to interdisciplinary level and we will
continue to grow indoors, but also with the ability to
show to be open to the fusion for this that symbolizes
the gastronomic culture of the world
