Sus platillos contienen mucha simbología, ¿po-
drían platicarnos sobre esto?
Josep:
El símbolo es un tributo, un guiño y respeto
a las diferentes tradiciones. Con toda humildad, tiene
que ver con esa forma de rendir homenaje a la cultura
y las creencias prehispánicas.
¿Cuál ha sido el mayor reto de esta gira?
Joan:
La logística, el montar todo el entramado, el
pensar cómo nosotros podíamos hacer todo esto po-
sible a nivel práctico, el poder estar en lugares donde
tuviéramos instalaciones e infraestructura necesa-
rias. Y también el gran reto, de pensar en mexicano,
colombiano y peruano, para hacer un menú que les
gustara, quizá ese fue el gran reto. Y realizar éste con
suficiente conocimiento previo, aunque cuando llegas
te das cuenta de que no sabes nada y que todavía hay
mucho por aprender.
¿Existe algún descubrimiento que a partir de
esta gira enriquezca la forma en la que cocinan?
Joan:
Nos llevamos muchísimas cosas, sobre todo
vivencias, sabores, aromas y productos que nos sor-
prenden con resultados y registros que no conocíamos.
¿Qué buscan transmitir en cada uno de los platos?
Jordi:
Sabor, felicidad y que cuando la gente los
pruebe, en cada lugar, los identifique como cosas
suyas; que aunque sean elaborados mediante una
técnica distinta, reconozcan sus sabores.
Jordi, mencionaste que el chocolate es el mejor
postre, ¿por qué?
Jordi:
Es el postre más sencillo, ancestral y la base
para toda pastelería, molería y parte de la cocina; es
un elemento muy complejo que parte de dos produc-
tos: el cacao y el azúcar, y dependiendo de su proceso
puede tomar una intensidad muy distinta. Es un pro-
ducto tan sencillo y, a la vez, tan complejo que para
mí es mágico. Definitivamente lo recomendaría como
parte de cualquier menú.
The dishes you create contain a lot of symbol-
ism, could you tell us about it?
Josep: The symbol is a tribute, a wink and respect
for different traditions. With all humility, has to do with
that way of paying tribute to the culture and the pre-
hispanic beliefs.
What has been the biggest challenge of this tour?
Joan: The logistics, the arrangement of all the
necessary things, thinking how we could make this
possible at a practical level, to be in places where we
could have all the necessary facilities and infrastruc-
ture. And also the great challenge that we had to think
asMexicans, Colombians and Peruvians tomake amenu
that they liked, perhaps this was the biggest challenge.
And doing this with prior sufficient knowledge, but the
truth is that when you arrive there you realize you know
nothing and there is still much to learn.
Is there a discovery from this tour that enrich-
es the way you cook?
Joan: We get a lot of things, especially experiences,
flavors, aromas and products that surprise us with re-
sults and conclusions we did not know.
What do youwant to convey in each of the dishes?
Jordi: Flavor, happiness and when people taste
them, in every place we have been, they can identify
them as theirs; even if the dishes have beenmade using
a different technique, they can recognize their flavors.
Jordi, you mentioned that the chocolate is the
best dessert, why?
Jordi: It is ancestral and a very simplest dessert
and the base for any cake, mole shop and part of the
kitchen; It is a very complex element that part of two
products: cocoa and sugar, and depending on its pro-
cess it can take a very different intensity. It is such
a simple product, and yet so complex that to me is
magical. Definitely I would recommend it as part of
any menu.
