Then the distillation process begins. It consists of
increasing the temperature to separate the water and
the alcohol, thereby raising the alcoholic content.
These two elements have different boiling points,
water boils at 100 °C and alcohol at 78.5 °C.
All this is done in Coffey Still continuous distilla-
tion columns.
This type of distillation is more effective for this
kind of liquor. Cognac and whiskey are distilled in
charentés-type charge and discharge stills.
This stage produces a high proof distillation with
many impurities. That is why the liquor is passed
through a rectifier, which eliminates them, and dis-
tilled water is added to obtain a commercial proof.
After, it is filtered and purified through fruit tree
carbon, usually apple and birch. This carbon is heated
to temperatures of between 500 and 600 °C, which
gives it a sponge-like appearance. Later, it will be
introduced into column filters and the vodka is
pumped from bottom to top. This process produces a

destilación continua tipo Coffey Still.
Esta clase de destilación resulta más eficaz para este ti-
po de aguardiente, a diferencia del cognac o del whisky esco-
cés, que se destilan en alambique de carga y descarga, como
el tipo charentés.
En esta etapa obtendremos un destilado de alta gradua-
ción alcohólica, con una cantidad considerable de impurezas.
Por esta razón, este aguardiente deberá pasar por un rectifi-
cador para eliminarlas y así obtener un alcohol puro, al que se
debe añadir agua destilada hasta obtener su grado comercial.
Después se somete a una filtración y purificación a través
de carbón vegetal obtenido de árboles frutales, de manzano o
abedul, principalmente. Este carbón se calienta a temperatu-
ras entre 500 y 600°C, que le darán un aspecto tipo esponja.
