he long journey fromacorn to glass begins in
the forests of Galicia, Cantabria and Asturias
in northern Spain. In these ancient forest
grow themighty Spanish oaks that one daywill pro-
vide some of the casks in which The Macallan Fine
Oak is matured. From this rich timber, the logs are
quarter sawn to provide the ‘stave’ lengths and the
air-dried, firstly in the north and the in the south of
Spain. The staves are then fashioned by hand into
casks in the cooperages of Jerez, where traditional
toasting changes the chemistry of the wood, adding
another vital ingredient to maturation.
To season the cask and draw out the harsher
tannins, some casks will be filled for a few months
with ‘mosto’, the young, lightly fermenting wine
produced immediately after the grape harvest in
late August, early September. The cask is then emp-
tied and filled with dry oloroso sherries. The sherry
is left to season the cask for up to eighteen months.
Very unusually, The Macallan Fine Oak also uses
a proportion of American oak sherry casks. These
are handcrafted from timber sourced in the ancient
woodlands of EasternUntiedStates, sawn into staves
in Kentucky and shipped to Jerez, Spain, where they
aremade into casks and seasoned with sherry.
The Macallan also sources casks crafted from
American oak and seasoned with premiumbourbon
for up to eight years.
All casks, whether Spanish or American oak,
sherry or bourbon seasoned, are emptied and be-
gin their long journey to The Macallan distillery in
Speyside, Scotland. Once the casks arrive they are
filled with the clear, distinctively rich, Macallan
‘newmake’ spirit.
Each cask will influence its contents in different
ways. American oak casks, seasoned with bourbon
or sherry, impart a subtle, delicate color with hints
of apple, floral, vanilla and sweet citrus aromas and
flavors. Spanish oak casks, seasoned with sherry,
impart a deep, rich color with aromas and flavors of
dried fruit, spice and chocolate orange.
The unique attributes of each cask and The Ma-
callan’s unwavering commitment to natural color,
presents Bob Dalgarno, The Macallans Whiskey
Maker, with the complex challenge of ensuring con-
sistent quality, character and color year after year.
To achieve this, Bob and his team sample thousands
of individual casks to select those that will finally
be married together prior to bottling.

l largo viaje desde la bellota al vaso de vidrio
comienza en los bosques de Galicia, Cantabria
y Asturias, en el norte de España. En estos an-
tiguos bosques crecen robles que algún día servirán
como barriles en donde madure The Macallan Fine Oak.
De esta rica madera, los troncos son cortados en
cuartos para producir las duelas y, posteriormente,
ser secadas al aire; primero en el norte y a continua-
ción en el sur de España. Luego, las duelas son ma-
nipuladas a mano para convertirlas en barriles en las
tonelerías de Jerez, donde los tostados tradicionales
cambian la química de la madera, agregando otro vital
ingrediente a la maduración.
Para curar los barriles, y extraer los taninos más
desapacibles, algunos son llenados con mosto duran-
te un par de meses, el joven y ligeramente fermenta-
do vino producido inmediatamente después de que
las uvas son cosechadas a finales de agosto, y princi-
pios de septiembre. Consecuentemente, los barriles
se vacían y se llenan con jerez seco y oloroso.
En algunas ocasiones, aunque no es la norma, The
Macallan Fine Oak usa una proporción de barriles de
roble americano y curado con bourbon Premium hasta
por ocho años. Estos barriles son fabricados a mano,
con madera proveniente de los bosques del este de
Estados Unidos, aserrados en duelas en Kentucky y
enviados a Jerez, España, donde son convertidos en
barriles y curados con jerez.
Todos los barriles, ya sean de roble español o ame-
ricano, curados con jerez o bourbon, son vaciados y
comienzan su largo viaje hacia la destilería de The Ma-
callan, en Speyside, Escocia. Una vez que los barriles
llegan a destino son llenados con el distintivo y claro
“new make”, licor espirituoso de Macallan.
Cada barril influye en su contenido de manera di-
ferente. Los barriles americanos, curados con bourbon
o jerez, impartirán un sutil y delicado color con rastros
de manzana, floral, vainilla y dulces aromas y sabores
cítricos. Los barriles españoles, curados con jerez, im-
partirán un profundo y rico color con aromas y sabo-
res de frutas secas, especias y chocolate con naranja.
Los atributos únicos de cada barril y el compromi-
so de The Macallan hacia los colores naturales presen-
tan a Bob Dalgrano, jefe de catadores de The Macallan,
con el complejo trabajo de asegurar una consistencia
de calidad, carácter y color año tras año. Para asegurar
esto, Bob y su equipo prueban miles de barriles indivi-
duales para seleccionar aquellos que finalmente serán
“casados” antes de ser embotellados.
