Between 80 and 90%. That’s why we tend to
change our Tasting Menu quite regularly. We use
plenty of ingredients from the Amazons and the
only ‘non-local’ ingredient is perhaps olive oil.

for over ten years now. This appears to have inspired a
new generation of chefs and all this has created a de-
mandinthemarket.Inthatwayindigenouspeopleand
small producershavebeen largely supportive.
15. In which environmental initiatives are you
involved with?
We have created “Retratos do Gosto” a label that
commercialises Brazilian ingredients, with the
same control concept as “fair trade”.
16.Is there any educational initiatives you are
involved with?
I am involved with GASTROMOTIVA. It is an NGO
that focuses on the professional development of
teenagers who have social problems; it has the aim
of creating values in the community. The objective
is to encourage unprivileged Brazilian youth to en-
ter the gastronomic labour market with profession-
al skills and also to create new businesses within
their communities. Together we have also created a
“short chef course” inside prisons, which have been
very successful but never publicised.
17. What captivated you about cooking?
It’s a link between two worlds. The one nature
gave us and the one made by man.
18. What drives you to create and innovate food?
I often become inspired by Heitor Villa-Lobos
who was a Brazilian composer, described as the sin-
gle most significant creative figure in 20th-century
Brazilian art music.
19. The food you findmost fascinating?
The food created by chefs. They tend to create
dishes that transcend cultural barriers.
20. Your all-time favorite ingredient?
Salt, with out a doubt
21. Where did the idea for DOM come from?
When I returned to Brazil in ‘94 after a number
of years in Europe, I worked as a chef in other res-
taurants but it was always my dream to open my
own, combining Brazilian ingredients with Europe-
an techniques. D.O.M. opened in 1999 and continues
to be the realization of that dream.

Usamos muchos ingredientes de las amazonas, el in-
grediente “No-Local” que usamos es el aceite de oliva.
14. ¿De quémodo estemenú refleja su herencia?
Hemos usado ingredientes Brasileños desde el primer
día que abrimos, hace diez años. Al parecer esto ha inspi-
rado a muchos chefs y todo esto ha creado una demanda
en el mercado. De estemodo, las personas indígenas y los
pequeños productores pueden ser apoyados.
15. ¿En qué iniciativas ambientales esta usted invo-
lucrado?
Hemos creado “Retratos do Gosto” una etique-
ta que comercializa ingredientes Brasileños con el
mismo concepto de control que el “fair trade”.
16. ¿Hay alguna iniciativa educacional con la que
esté involucrado?
Estoy involucrado con GASTROMOTIVA. Es una ONG
que se enfoca en el desarrollo profesional de adolescen-
tes que tienen problemas con la sociedad; ha sido mi
meta crear valores en la comunidad. El objetivo es alen-
tar a la juventud brasileña no privilegiada a adentrarse
en el marcado laboral gastronómico con habilidades pro-
fesionales y poder crear un nuevo negocio en sus comu-
nidades. También hemos creado los cursos cortos para
ser chefs, dentro de prisiones, los cuales han sido muy
exitosos pero nunca publicitados.
17. ¿Que lo cautivo de la cocina?
Es un enlace entre dos mundos. El que nos dio la
naturaleza y el que creó el hombre.
18.¿Qué lo motiva a crear e innovar comida?
Me suelo inspirar con Heitor Villa-Lobos, el cual
fue un compositor Brasileño, descrito como la fi-
gura más significativa del siglo 20 en el arte y mú-
sica brasileña.
19. ¿Qué comida encuentra más fascinante?
La comida creada por chefs. Ellos tienden a lograr
platillos que trascienden barreras culturales.
20.¿Cuálessuingredientefavoritodetodoslostiempos?
La sal, sin duda.
21. ¿De dónde salió la idea de D.O.M?
De mi regreso a Brasil en el ’94 tras un numero
de años en Europa, trabajé como chef en otros restau-
rantes, sin embargo mi sueño siempre había sido abrir
el mío, combinando ingredientes brasileños con técni-
cas europeas D.O.M. abrió sus puertas en 1999. Sigue
siendo la realización de un sueño.
