o se puede sermás natural y ecosustentable que
De Kas. Este lugar enclavado en medio del par-
que Frankendael es, quizá, el restaurante con la
ubicación más lógica que he visto en todos mis viajes.
Y es que De Kas es un invernadero que data de 1926 y
rescatado por el chef GertJan Hageman para convertir-
lo en lo que es hoy, el mejor restaurante de Amsterdam
y uno de los mejores de Europa entera. Dividido en dos,
la primera parte del lugar es el restaurante en si mismo.
La segunda, un invernadero en toda la extensión de la
palabra donde se cultivan y cosechan los productos que
terminan en los platos de los comensales.
Por supuesto, el espacio del lugar no da para cumplir
la demanda del restaurante, pero eso se soluciona con
productos de los jardines de alrededor o, en su caso, de
una granja de productores locales cercanos a la ciudad.
Vaya, De Kas es la realización del concepto de Slow Food
y de cocina sustentable en sumáxima expresión.
Aquí no hay una carta fija, sino que diariamente se
realiza un menú de tres tiempos, consistente en tres
entradas, un plato fuerte y un postre. Así que nos di-
mos a la tarea de cerrar los ojos, abrir la perspectiva y
comenzar a disfrutar. Y miren que la perspectiva nece-
sitaba ser abierta pues nuestra copa de champagne fue
servida de una manera que, a la fecha, nadie ha hecho
y nadie -creo- volverá a hacer: con un par de hojas de
albahaca flotando. Sí... el sabor cambia y nos prepara
para lo que vendrá.

able than De Kas. This place nestled amidst
Frankendael Park is, perhaps, the restau-
rant with the most logical location I’ve seen in all
my travels. De Kas is a greenhouse which dates from
1926 and was rescued by the chef GertJan Hageman
tomake it what it is today; themost outstanding res-
taurant in Amsterdam and one of the best in Europe.
Divided into two, the first part of the venue is the
restaurant itself. The second, a greenhouse in every
sense of the word where products that end up in the
diners plate are grown and harvested.
Of course, the place does not give space tomeet the
demand of the restaurant, but that is solvedwith prod-
ucts of the surrounding gardens or, more appropriate,
of local producer farms near the city, De Kas is the re-
alization of the concept of Slow Food and sustainable
cuisine at itsfinest.
Here, the menu isn’t always the same, but a three-
course meal is performed daily, consisting of three en-
trances, a main course and dessert. So we took on the
task of closing our eyes, opening to the prospect and
start enjoying. Since we looked at the perspective we
needed to open our glasses to a bottle of champagne
which was served in a way that, to date, nobody has
doneandnobody,Ithink,willdo:withafewbasilleaves
floating. Yes ... the taste changes and prepares us for
what is to come.
