Como plato fuerte, imperdible las Chuletas de Cor-
dero Beemster rostizadas con Lavanda Marina, acom-
pañadas de un gravy del propio cordero perfumado con
tomillo. La identidad del plato es clara: el chef Loven ha
creado un concepto basado en los sabores locales y lo
ha llevado al extremo de la alta cocina. Y si eso no fuera
suficiente para saberlo, el postre es un cierre total a esta
idea. Yo, particularmente, nunca puedo resistirme a un
Crème Brûlée y rara vez me sorprenden. Pues aquí está
preparado con extracto de Ocotea y un helado de rega-
liz que bien podría hacerme poner curso de las velas a
Amsterdam de nuevo con tal de volver a disfrutarlo.
Greetje es un concepto único en Amsterdam. Un
concepto de cocina honesta y llena de recuerdos que
se nos pone en la mesa de manera sencilla y sin mira-
mientos o pretensiones. René Loven lo sabe y, por ello,
simplemente continúa haciendo honor a un lugar que,
después de todo, lleva el nombre de sumadre, la prime-
ra influencia culinaria que tuvo en la vida. Y sí

As a main dish, the Beemster lamb chops roost-
ed in marine lavender are unmissible, accompanied
with perfumed gravy. The identity of this dish is
clear: chef Loven has created a concept based upon
local flavors and has taken it to the extreme of haute
cuisine. As if this isn’t enough, dessert is a total
closure of this idea. I particularly, have never been
able to resist Crème Brûlée and am rarely surprised
by them. Well, the Ocotea extract prepared here and
the liquorish ice cream could be able tomake me set
sails with course to Amsterdamoncemore as far as I
have the opportunity of tasting it once again.
Greetje is a unique concept in Amsterd, a con-
cept of honest cooking and full of memories that
are set to us at the table in a simple manner, with-
out second regards or pretentions. René Loven
knows this and because of it, simply continues to
honor a place that, after all, carries the name of his
mother, the first culinary influence he had in his
life. And yes…honor to whom honor deserves
