Over time, New York became less known for
its agriculture than its commerce, but the de-
votion of farmers and artisans across New York
is bringing this history back to the fore and
it’s very exciting. (Just take a walk through The
Union Square Farmers’ Market on a Saturday
afternoon and you’ll see exactly what I mean.) I
was amazed when I moved the New York to find
ingredients that rival the best in the world so
readily available. It’s crucial we support the hard
working individuals who devote their lives to
producing such extraordinary things and they
are one of the reasons we decided to embark on
our last cookbook, I Love New York: Ingredients
and Recipes. We wanted to celebrate those who
commit themselves to growing an ingredient,
to creating something, and to doing it as well as
they do.
Since moving to America to work at Campton
Place in San Francisco and then in moving to New
York to be the Chef of Eleven Madison Park, I know
my philosophy has evolved even further. The root of
my cuisine still resides in those early experiences in
Switzerland, in cooking and eating seasonally and
locally, and in my time spent with Chef Rabaey, but
now I’ve been able to developmy own style, my own
opinion, here in New York. It all starts with the best
ingredients, all those ingredients I’ve discovered
that I can get from New York, not just in it. It’s been
essential to me that the perfect ingredient be the
focal point of a dish. At Eleven Madison Park this
has been evident in the food, even early on. We’ve
always focused on beautiful products, and excellent
technique. What’s changed is that I’ve learned the
importance of place, of rooting our food firmly in
the history and traditions of New York, while taking
full advantage of its agricultural richness.
A great example of this is our sea salt, which
we get from Amagansett Sea Salt Company on
Long Island. I tasted the salt years ago and was
astonished at how clean and pure it tasted – it
tasted like the Atlantic.
Con el tiempo, Nueva York se hizo menos conocida
por su agricultura que por su comercio, pero la devoción
de los granjeros y artesanos de la ciudad entera está
atrayendo una vez más a la historia y su esencia lo cual

presionado cuando me mudé a Nueva York y encontré
ingredientes que bien podrían ser rivales de los mejo-
res del mundo que son difíciles de encontrar. Es crucial
que apoyemos a estos individuos tan trabajadores que
dedican sus vidas a la producción de cosas tan extraor-
dinarias, ellos son una de las razones del porqué hemos
decidido embarcanos en la creación de un nuevo libro de
cocina “I Love New York: Ingredients and Recipes”. Que-
ríamos celebrar a aquellos que se han comprometido al
cultivo de un ingrediente, a la creación de algo y a hacer
de manera tan extraordinaria lo que hacen.
Desde que me mudé a América y comencé a trabajar
en el Campton Palace de San Francisco, para después vivir
en Nueva York y ser chef de Eleven Madison Park , ahora
conozcomi filosofía y ha evolucionado aúnmás. La raíz de
mi cocina aún reside en aquellas experiencias tempranas
en Suiza, en cocinar y comer de manera estacional y lo-
cal y enmi tiempo con el chef Rabaey, sin embargo, ahora
he podido desarrollar mi propio estilo, mi propia opinión,
aquí en Nueva York. Todo empieza con los mejores ingre-
dientes, todos esos ingredientes que descubrimos y que
podemos conseguir deNueva York, no sólo en ella. Ha sido
esencial para mí que el ingrediente perfecto sea el centro
del platillo. En Eleven Madison Park esto ha sido evidente
en la comida, incluso desde sus inicios. Siempre nos he-
mos enfocado en la belleza del producto y una técnica ex-
celente. Lo que ha cambiado es que he aprendido sobre la
importancia de lugar, de las raíces de nuestra comida que
tienen una historia firme y llena de tradiciones neoyorqui-
nas, mientras tomamos ventaja de la riqueza agrícola.
Un perfecto ejemplo de esto es nuestra sal de mar,
la cual conseguimos de la compañía Amagansett Sea
Salt Company en Long Island. Probé esta sal hace años y
quedé impresionado por lo limpia y pura que sabía – era
como probar el Atlántico.
